Mouth Watering Monday's

Its Monday again and Brenda asked me to start the Mouth Watering Monday this week.
We are going to do MeatLoaf. So post your favorite recipie.
Mine is this
1 pounds of sirloin
12 crackers anykink crushed
1 egg
grated onion
grated carrot
gratted green pepper
crushed garlic
salt  to taste
pepper to taste
1.2 cup grated parmesan cheese also 1/2 catchup
also squirt catsup on top
Mix all together form a loaf and bake 325 for 1 hr.

By the way Brenda's computer is on the fritz and she isnt sure when it will come back to life.
She also said that a guy asked her for a date in the produce isle at Walmart today. She was in shock@!!!!!!!!!!

Meatloaf

2/3 cup dry bread crumbs
1 cup milk
1  1/2 lb. ground beef
1/2 lb. ground pork (we use Jimmy Dean regular pork sausage)
2 eggs ,beaten
1/2 tsp. salt
1 tsp. pepper
1/2 tsp sage
1/3 c. grated onion

Topping

3 T. brown sugar
1 tsp.dry mustard
1/4 c. ketchup
1/8 tsp. nutmeg

Soak crumbs in  mil****il mushy. Add beef, pork, eggs, onion and seasonings. Mix well with hands. Form mixture into oblong loaf shape and place in 9"x 13" baking pan.
Make topping: mix sugar, ketchup, mustard and nutmeg. Pour over raw meat. 
Bake loaf  1  1/2 -2 hours or until loaf is brown and internal temperature is 180 degrees. Remove from oven and let stand 10 minutes.

Meatloaf.... hmmmm I don't usually measure, I'm a toss and cook kinda of gal especially with meatloaf.  I'll try to get it right.

2lbs of 94% ground beef
1 med onion chopped fine
1/2 bell pepper chopped fine
2-3 slices of bread (day old is best)
1 cup of Carnation canned milk
3/4 c Heinz 57
1 c Catsup
salt and pepper to tast

break up bread, pour milk over it and let it soak it up until you can make a mush out of it.  Add ground beef, onions, pepper,  Heinz 57, catsup, salt and pepper and mix well.  Punch out air and shape into loaf. Bake at 325 for 1 hr.

During the last 20 minutes of cooking time if you would like you can glaze it.

Glaze

1 cup catsup
1/2 cup honey
Mix well and pour over meatloaf.

Yummy, don't know how WLS friendly it is but if you use the milk it is moist and the 94% meat makes it low fat.  (I will usually catch a whole sirloin or london broils on sale and just have them grind without adding any fat so my meat is really low fat)  I gues the bread would give you some carbs but it makes a large loaf so I wouldn't think too much.

    Preheat oven to 350 degrees F.

    Mix thoroughly thawed meat with saltines, tabasco and vegetables.

    If using fresh onions mix in at this time.

    Mix in eggs.

    Add salt, pepper, dried onions and bourbon.

    Use oil to lightly grease a glass pie pan or loaf pan.
  7. 7
    Press mixture into pan.
  8. 8
    Bake for about 1 hour.

well i would post a reciepe for meatloaf but i never make the same way twice.. lol depends on what i have on hand....usually always includes onions and eggs and some sort of filler, either oats, bread, crackers.  i have put cheese in the middle of the loaf, i have used rotel in it . so it just depends on what sort of meatload i want and what i have handy ....

That's the great thing about meatloaf.  The only thing common to all receipes for it is MEAT.

While I am great on getting new recipes and enjoy looking at all of them on here.....my personal thought is that we should try to come up with more WLS friendly recipes....sorry, that's just my humble opinion.

I do not have a set recipe for my meat loaf.

I start with 2lbs of turkey or 93% beef.

Then I go to the fridge.  Add 2 eggs.  Worsty sauce (about 1/8 cup).  1/4 cup of any kind of BBQ sauce you can find in the fridge.  Can of stewed tomatoes (drained).  Can of mixed vegetables.

Mix all this together thoroughly.  Then add your choice of the following:

Crumble Saltines
Pringles
Ritz Crackers
Bread Crumbs

I never measure, just 'til it looks right. 

Form into loaf, top with a tomato topping of some kind.

Sometimes I will use a tomato sauce, sometimes mix catsup and mustard together.  Add some of the BBQ sauce to the mix.

Bake at 325 for one hour.

I'm like many others I don't measure and I make it different each time. I have kinda a basic recipe but I just add what seasonings I want.

I usually use extra lean beef, onion, garlic,oatmeal,eggs, ketchup, chili powder, season salt, pepper and worcestershire. Sometimes I use bell peppers. I 've used taco seasoning to flavor it. I add cheese, like parmesan. It's what I feel like the day I make it. You can't really mess up with meatloaf. Some are just better than others.
